My mom hooked me up with her dad's stuffing recipe, as I'll be cooking the bird & the goods this year.

Stuffing for 15-18 pound turkey:

- Cooked giblets finely chopped
- ½ cup celery, finely chopped
- 2 medium sized onions, finely chopped
- 2 pounds bread (21 cups) measured after cutting in cubes
- 1 tablespoon salt
- 1 tablespoon poultry seasoning
- ½ teaspoon pepper
- ½ teaspoon sage
- 3 eggs beaten1 cup liquid from cooking giblets
- ½ cup fresh parsley chopped. (If using dried parsley - a little less than ¼ cup)
For bigger turkey & leftovers!
- Giblets
- 3 cups celery, finely chopped
- 3 cups onions, finely chopped
- 48 cups bread cubes
- 1 ½ tablespoons salt
- 1 teaspoon pepper
- 1 teaspoon sage
- 10 eggs, beaten
- 2 – 3 cups liquid from cooking giblets
- ½ to 1 cup fresh parsley (if using dried, use ¼ cup)
Cook giblets and chop fine. Melt butter or margarine and slowly simmer the celery and onions. Cube the bread and to it add the salt, poultry seasoning, , parsley, pepper and sage. Combine celery and onion mixture with bread. Add beaten eggs, and liquid. Toss lightly with a fork until all ingredients are well blended. |
